
Chai Spice Coffee & Cinnamon Wafers
In the patisserie magazine, we have created a number of coffee variations including small sweet bites.These perfect combinations are ideal for the guest who doesn't want dessert, but can be tempted by something extra.
Ingredients
400mlWater
1Cinnamon stick
half tsp ground cardamom
1shot of lungo coffee
250mlFresh whipped cream
2Granulated sugar
Star anise
30gBrown soft sugar
100gCream
Crispy nuts
100gMascarpone
cookie dough cinnamon
mini wafers
Preparation
- Bring the water to a boil with the star anise, cinnamon stick, and brown sugar.
- Let this steep for 10 minutes.
- Whip the cream with the cardamom and sugar until stiff and put it in a piping bag.
- Prepare the coffee and pour in the infused herbal drink.
- Top with the whipped cream and garnish with cinnamon and star anise.
- Whip the mascarpone together with the cream until soft peaks form.
- Transfer to a piping bag.
- Squeeze a ball of cinnamon cookie dough between two mini waffles.
- Garnish the sides with the cream and the crunchy nuts.
