Courgette flower skewers
We fill the courgette flower with a salmon farce, then steam it and carefully grill it on the barbecue; delicious! The salmon farce is enough for about 20 courgette flowers.Ingredients
350gCream 35%
20gwhite bread without crust
50gEgg white
400gfresh salmon
Pepper and salt
courgette flower
tabasco oil
finely chopped fresh herbs (to taste)
Preparation
- Mix the salmon, cream, white bread, egg white, fresh herbs, pepper, and salt in a food processor to make a farce.
- Using a piping bag, pipe the farce into the zucchini flowers.
- Then steam the zucchini flowers at 100°C on full steam.
- Carefully skewer the zucchini onto the skewer and brush the zucchini flowers with Tabasco oil before grilling.
- Wrap the flowers in aluminum foil (to protect the flower).
- Grill the zucchini flowers on the barbecue.
