Preparation
- Fry rice paper until crispy in oil and then drain well on paper.
- Using a tea strainer, sprinkle beetroot powder over it and break into pieces.
- Serve the crackers as a bite or amuse-bouche with smoked eel and a sauce based on mayonnaise, horseradish, and crème fraîche.
- Serve the cracker immediately.
