Ingredients

juice of 2 limes
6ripe avocados
5gMint leaves
100mlDebic Cooking Cream 20% Original

Preparation

  1. Peel the avocados and vacuum-seal the flesh.
  2. Cook sous-vide at 43°C for 1 hour.
  3. Heat the cooking cream to 40°C.
  4. Finely blend the avocados in a blender and add the cream, mint, and lime juice.
  5. Plate on the dishes.
