
Parsnip and savory cream
A delicious thick cream of parsnip.Ingredients
Parsnips
Milk
1units.itemsGarlic clove
1units.itemsShallot
Butter
Chicken broth
fresh savory
Preparation
- Peel the desired amount of parsnips and cut them into large pieces (remove the core beforehand if necessary).
- Finely chop the shallot and garlic and sauté in a little oil.
- Add the parsnip and sauté well.
- Deglaze with chicken stock and a splash of milk and gently cook the parsnip.
- Puree the cooked parsnip with a knob of butter and some fresh savory into a smooth cream.
- Pass through a sieve and season with salt.
