Preparation
- Let the gratin tart thaw.
- Cut the brick pastry into quarters.
- Crumble some gratin onto a pastry point and top with ham cubes and grated cheese.
- Press a small well in the center and drop a quail egg into it.
- Fold the pastry towards the center and seal well.
- Fry the parcels in oil until golden brown and crispy.
- Serve with a fresh yogurt-garlic dipping sauce.
