Mousse of foie gras

For this dish, we use the Mother of All Rubs spice mix from Flavor.Guru. This rub is truly delicious with everything.

Ingredients

1Sushi vinegar
500gpre-cooked red beets
5gCoriander seed
2Fresh figs
foie gras mousse
xanthan gum
400mlMirin Fu
fresh radishes
3gAgar
Mother of All Rubs seasoning

Preparation

  1. Make a beetroot cream by putting the beets in a Magimix or thermoblender. Season with the Mother of All Rubs seasoning and blend smooth with some xanthan gum. This will give you a nice smooth cream. For acidity, add some sushi vinegar.
  2. Cut the figs into nice wedges.
  3. Slice the radish thinly with a slicer or mandoline. Place in ice water.
  4. Put the Mirin in a pan and add coriander seed. Let infuse on low heat for 5 minutes. Strain the mixture and reduce the Mirin with agar. Let cool and blend into a gel in the Magimix or thermoblender. Transfer to a piping bag.
  5. Season the dish with Mother of All Rubs and finish with some cress from Koppert Cress.
