Ingredients

Preparation

  1. Sprinkle a layer of salt about 1 centimeter thick in a dish.
  2. Place the egg yolks in the salt and cover them completely with salt again.
  3. Let cure for 24 hours.
  4. After 24 hours, remove the egg yolks from the salt and rinse them with cold water.
  5. Place the yolks on a baking mat and dry at 70°C until they are completely dried.
  6. Store in a sealed container.
  7. Grate the egg yolks with a fine grater over a dish.
