Preparation
- Sprinkle a layer of salt about 1 centimeter thick in a dish.
- Place the egg yolks in the salt and cover them completely with salt again.
- Let cure for 24 hours.
- After 24 hours, remove the egg yolks from the salt and rinse them with cold water.
- Place the yolks on a baking mat and dry at 70°C until they are completely dried.
- Store in a sealed container.
- Grate the egg yolks with a fine grater over a dish.
