Preparation
- Cook the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
- Sauté the spinach with some chopped shallot and garlic.
- Cut the tomatoes and avocado into a rough brunoise and dress with some lime juice.
- Top the pancakes with spinach, the avocado mixture, smoked salmon, crème fraîche, and spring onion.
- Finish with slices of smoked salmon, crème fraîche, and spring onion.
