Salmon cream pancake

Salmon cream pancake with spinach, avocado, salmon and crème fraîche.

Ingredients

Spinach
Shallot
Garlic
Crème fraîche
Smoked salmon
Hass avocado
Lime juice
Tomatoes
Spring onion

Preparation

  1. Cook the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
  2. Sauté the spinach with some chopped shallot and garlic.
  3. Cut the tomatoes and avocado into a rough brunoise and dress with some lime juice.
  4. Top the pancakes with spinach, the avocado mixture, smoked salmon, crème fraîche, and spring onion.
  5. Finish with slices of smoked salmon, crème fraîche, and spring onion.
