Smoked egg yolk with creamy truffle sauce

Our culinary advisors created an amuse-bouche of smoked egg yolk with truffle.

Ingredients

Eggs
1.5Whole milk
Green asparagus
Smoke oil
1truffle jus
1Milk powder
Poultry stock

Preparation

  1. Crack fresh eggs and remove the yolks. Place the yolks in small heatproof dishes and pour poultry stock over them. Place the dishes in a smoker over low heat and let them cook in the warm smoke for about 10 minutes.
  2. Keep the yolks in the stock. Serve the yolks with a foamy truffle sauce: 1 dl poultry stock, 1.5 dl whole milk, 1 dl truffle jus, and 1 teaspoon milk powder.
  3. Mix everything well, heat, and froth with a hand blender. Serve the egg yolks with green asparagus grilled in smoked oil.
