
Smoked egg yolk with creamy truffle sauce
Our culinary advisors created an amuse-bouche of smoked egg yolk with truffle.Ingredients
Eggs
1.5Whole milk
Green asparagus
Smoke oil
1truffle jus
1Milk powder
Poultry stock
Preparation
- Crack fresh eggs and remove the yolks. Place the yolks in small heatproof dishes and pour poultry stock over them. Place the dishes in a smoker over low heat and let them cook in the warm smoke for about 10 minutes.
- Keep the yolks in the stock. Serve the yolks with a foamy truffle sauce: 1 dl poultry stock, 1.5 dl whole milk, 1 dl truffle jus, and 1 teaspoon milk powder.
- Mix everything well, heat, and froth with a hand blender. Serve the egg yolks with green asparagus grilled in smoked oil.
