Preparation
- Mix the tempura flour with curry to taste.
- Put the flour in the food processor and, while running, add just enough sparkling water until you have a yogurt-thick batter.
- Remove the skin from the smoked salmon bellies, dip in the batter, and fry in oil until crispy.
- Serve with a yogurt-based dipping sauce.
