Preparation

  1. Make a boemboe paste, combine everything and blend until smooth.
  2. Rub the meat, cut into evenly sized pieces, with this and add lemongrass.
  3. After marinating for 6 hours, stew over low heat for 2.5 hours until tender.

  1. Clean the pearl onions, add oil and vinegar.
  2. Vacuum seal and cook at 90°C for 20 minutes.

  1. Cook the washed rice until done in 7 minutes, the soaked lentils as needed.
  2. Finish to taste with coriander, parsley, red chili, and lime zest.
