125gsummer fruit puree (lime, orange, grapefruit - 41152350)
11gAlbumin
Preparation
- Mix the juice with the albumin and half of the sugar well, then whip in a stand mixer with a whisk attachment.
- When soft peaks form, add the rest of the sugar and continue whipping until stiff.
- This foam can be nicely gratinated with a blowtorch.
