Gratin foam of citrus fruit

A fresh foam to serve with your dish.

Ingredients

250gFine sugar
125gsummer fruit puree (lime, orange, grapefruit - 41152350)
11gAlbumin

Preparation

  1. Mix the juice with the albumin and half of the sugar well, then whip in a stand mixer with a whisk attachment.
  2. When soft peaks form, add the rest of the sugar and continue whipping until stiff.
  3. This foam can be nicely gratinated with a blowtorch.
