Green asparagus quiche

Delicious vegetarian dish designed by Restaurant Triptyque.

Ingredients

250gflour, plus extra for dusting
3units.eetlepelCold water
1units.theelepelSalt
butter, for greasing
125gButter

250mlCream 35%
2Sprigs of thyme
2Eggs
Salt and pepper
1bunch of green asparagus
150gblue cheese

Preparation

For the dough

  1. Put all the ingredients for the dough in a bowl and knead into a nice firm dough. Cover the bowl and let the dough rest in the refrigerator for 1 hour.
  2. Preheat the oven to 180°C.
  3. Take the dough out of the refrigerator and dust a work surface with flour. Roll out the dough into a round sheet about 3 mm thick and line a greased quiche tin with it.
  4. Blind bake the crust for 10 minutes at 180°C.
  5. Now make the filling. In a bowl, mix the eggs, cream, and thyme with salt and pepper to taste.
  6. Spread the asparagus slices over the dough in the quiche tin. Then pour the egg-cream mixture over it.
  7. Crumble the blue cheese and distribute it evenly over the quiche.
  8. Bake the quiche in the oven for about 10 minutes until done.
