
Green asparagus quiche
Delicious vegetarian dish designed by Restaurant Triptyque.Ingredients

250gflour, plus extra for dusting
3Cold water
1Salt
butter, for greasing

250mlCream
2Thyme sprigs
2Eggs
Salt and pepper
1bunch of green asparagus
150gblue cheese
quiche tin (Ø 20 cm and 3 cm high)

Preparation
For the dough
- Put all the ingredients for the dough in a bowl and knead into a nice firm dough. Cover the bowl and let the dough rest in the refrigerator for 1 hour.
- Preheat the oven to 180°C.
- Take the dough out of the refrigerator and dust a work surface with flour. Roll out the dough into a round sheet about 3 mm thick and line a greased quiche tin with it.
- Blind bake the crust for 10 minutes at 180°C.
- Now make the filling. In a bowl, mix the eggs, cream, and thyme with salt and pepper to taste.
- Spread the asparagus slices over the dough in the quiche tin. Then pour the egg-cream mixture over it.
- Crumble the blue cheese and distribute it evenly over the quiche.
- Bake the quiche in the oven for about 10 minutes until done.
