Savory French toast with Pan Brioche

A savory version of French toast using Pan Brioche as the base. With a topping of caramelized mushrooms, this is a surprising dish.

Ingredients

mixed mushrooms
chopped onion
Clove of garlic, finely chopped
Balsamic vinegar
Apple syrup
Thyme
Parsley

Pan brioche, sliced
Eggs
Milk
Salt
Pepper
Butter

Preparation

  1. Heat butter in a frying pan over medium heat. Sauté the onion and garlic for 2 to 3 minutes until translucent.
  2. Add the vinegar and apple syrup and cook over medium to high heat for 1 to 2 minutes until it becomes syrupy.
  3. Add the mixed mushrooms and fry for 3-4 minutes until they caramelize.
  4. Add the thyme and toss. Remove from the heat and keep warm, covered. Season with salt and pepper.

  1. For the French toast, whisk the milk and salt together in a bowl. Have the beaten eggs ready in a shallow dish.
  2. Heat butter in a large frying pan over medium heat.
  3. Dip 2 slices of Pan Brioche first in the milk mixture and then in the egg. Fry the French toast for 2 minutes on each side until golden brown.
