
Kaltbach Creamy cheese dip

Preparation
- Wash the thyme and shake dry. Bring the cream and thyme to a boil in a saucepan.
- Remove from the heat and let infuse for about 10 minutes.
- Remove the rind from the KALTBACH Creamy and grate it.
- Strain the cream into a bowl and let cool.
- Add the egg yolks and slowly heat while stirring over a warm water bath to about 85°C until the thyme cream begins to thicken.
- Peel the garlic.
- Remove the thyme cream from the water bath.
- Add grated cheese and garlic and blend finely with a hand blender.
- Season the dip with salt and pepper.
- Serve in a bowl with, for example, tortilla chips.
