
Crunch of aged cheese with caramelized peach and walnut

Preparation
- Place the slices of aged cheese on a baking mat in the microwave and bake on full power for 1 minute.
- Store the crispy cheese in a well-sealed container.
- Put the apricot puree in a measuring jug, add the emulbinder, and blend until smooth using an immersion blender.
- Cut the peach into pieces and cook them in a small pan.
- Sprinkle some sugar over and caramelize briefly.
- Store in a well-sealed container.
- Place the crispy cheese slice on a plate.
- Break the Lady's Blue and aged goat cheese into pieces and place on the crispy cheese slice.
- Pipe the apricot jelly in between.
- Place the caramelized peach, walnuts, dried blackberries, and blueberries next to it.
- Finally, grate roasted hazelnuts over the cheese dish with a microplane grater.
