Lime meringue with chocolate mousse

Do you want to surprise your guests at the end of the dinner? Then offer them snack desserts. These are small, affordable creations that can be shared.This makes selling a digestif or coffee extra easy.

Ingredients

170glime purée
300gSilvia egg white powder

7gAgar
400gWhipped cream
125gMilk
170gDark chocolate

Oreo cookies
Strawberries
Lime zest

Preparation

  1. Mix the lime purée and egg white powder with a whisk, then whip until airy in a stand mixer with a whisk attachment (grease-free).
  2. Pipe dollops of the mixture and let dry at 85°C for about 2 hours.
  3. Store in boxes, optionally with some moisture absorbers (silica gel beads).

  1. Mix agar+ with the cream, milk, and egg yolk.
  2. Heat while stirring until 80°C.
  3. Add the dark chocolate and fold in well.
  4. Chill and let rest overnight.
  5. Whip until airy in a stand mixer.

  1. Pipe the chocolate mousse onto a plate.
  2. Chop the Oreo cookies and sprinkle over the chocolate mousse.
  3. Insert the strawberries into the chocolate mousse.
  4. Place the meringue on top and grate some lime zest over it.
