Pomegranate meringues

Delicious small meringues with the explosive flavor of pomegranate thanks to the use of pomegranate compound.

Ingredients

120gWater
300gSilvia egg white powder
50gpomegranate compound
Silica gel

Preparation

  1. Mix all ingredients with a whisk and then whip until airy in a Kitchenaid with a whisk (grease-free).
  2. Pipe dollops of the mixture and let dry at 85°C for about 2 hours.
  3. Store in boxes, optionally with some desiccants (silica gel beads).
