5gAgar agar powder
Lemon fruit sheet
Plunger/craft punch set
Horn pen
Yoghurt ice cream
Edible petal
Preparation
- Mix all the ingredients well and heat the mixture while stirring until it reaches boiling point.
- Let it cool and then blend the jelly smooth in a food processor.
- Transfer the jelly to a piping bag.
- Cut small circles out of the lemon fruit leather. Tip: Use a plunger cutter for the perfect circle.
- Briefly fry the circles in oil at 180°C.
- Immediately shape them into cones. Tip: Use a horn pin for the right shape.
- Put a small amount of gel at the bottom of each cone.
- Fill the cone further with yogurt ice cream.
- Garnish with a dollop of gel and an edible flower petal.
