Mini lemon cornetto with yogurt ice cream and gel of tropical fruit

A refined mini cornetto with a crispy lemon wafer, filled with creamy yogurt ice cream and finished with a fresh gel of tropical fruit.Pre-desserts, also known as dessert amuses, are small tasty creations that introduce the dessert in a festive way. These mini-bites stimulate the taste buds and prepare you for the finale of the menu.

Ingredients

125gHoney
250gTropical fruit purée
5gAgar agar powder

Lemon fruit sheet
Plunger/craft punch set
Horn pen

Yoghurt ice cream
Edible petal

Preparation

  1. Mix all the ingredients well and heat the mixture while stirring until it reaches boiling point.
  2. Let it cool and then blend the jelly smooth in a food processor.
  3. Transfer the jelly to a piping bag.

  1. Cut small circles out of the lemon fruit leather. Tip: Use a plunger cutter for the perfect circle.
  2. Briefly fry the circles in oil at 180°C.
  3. Immediately shape them into cones. Tip: Use a horn pin for the right shape.

  1. Put a small amount of gel at the bottom of each cone.
  2. Fill the cone further with yogurt ice cream.
  3. Garnish with a dollop of gel and an edible flower petal.
