Mini vol-au-vents with wild boar ham and Ardennes onion confit according to the recipe by Didden.

Ingredients

200gwild boar ham
walnuts and hazelnuts
Chives
dandelions
Mayonnaise
oak leaf lettuce, red lettuce and green lollo lettuce
Ardennes onion confit by Didden

Preparation

  1. Wash the lettuce and blanch the chives.
  2. Cut the slices of ham in half widthwise.
  3. Chop the walnuts and hazelnuts finely.
  4. Snip the dandelions (chop coarsely).
  5. Mix the nuts, dandelions, Ardennes onion confit, and salad mix.
  6. Fill the ham with the mixture and tie with a sprig of chive.
