Lime chocolate mousse

A deliciously light and refreshing mousse made with lime chocolate.

Ingredients

100gGlucose syrup
870glime chocolate
320gCream
150gEgg yolk
100gFine sugar
150gEgg white
1000gcream (softly whipped)

Preparation

  1. Heat the cream.
  2. Melt the lime chocolate in it.
  3. Boil the glucose syrup.
  4. Whisk the egg yolks with the warm glucose syrup in the mixer with a whisk until cold and thick. Mix this with the chocolate cream.
  5. Whip the egg whites with the sugar until stiff peaks form. Fold this into the chocolate mixture.
  6. Finally, fold in the semi-whipped cream.
