
Lime chocolate mousse
A deliciously light and refreshing mousse made with lime chocolate.Ingredients
100gGlucose syrup
870glime chocolate
320gCream
150gEgg yolk
100gFine sugar
150gEgg white
1000gcream (softly whipped)
Preparation
- Heat the cream.
- Melt the lime chocolate in it.
- Boil the glucose syrup.
- Whisk the egg yolks with the warm glucose syrup in the mixer with a whisk until cold and thick. Mix this with the chocolate cream.
- Whip the egg whites with the sugar until stiff peaks form. Fold this into the chocolate mixture.
- Finally, fold in the semi-whipped cream.
