
Okonomiyaki pancake
Anyone who has ever been to Japan will surely have seen this: okonomiyaki is one of the most famous Japanese street foods!It's fun to vary with this, we made this pancake with white cabbage, asparagus, and pork belly.
Ingredients
100gwhite flour
5gBaking powder
175gDashi
30gcornstarch
Carrot
pork belly
2Eggs
400gWhite cabbage
Asparagus
Salt
Soy sauce
Sugar
katsuobushi
okonomiyaki sauce
Kewpie mayonnaise
Preparation
- Mix the flour, baking powder, sugar, and cornstarch in a bowl.
- Gently stir in the dashi and eggs, along with the vegetables and a splash of soy sauce. Season the batter with salt and let it rest overnight.
- Spoon a little batter into a pan and fry on one side over low heat until crispy.
- Place the pork belly on the other side, flip, and fry the pork and okonomiyaki until crispy.
- Let the okonomiyaki cook through slowly and place on a plate.
- Top with Kewpie mayonnaise and okonomiyaki sauce.
- Finally, sprinkle a little katsuobushi on top.
