Mushroom soup with truffle croutons

Preparation

  1. Bring two liters of water to a boil and, while stirring, add the weighed soup powder.
  2. Let the soup simmer gently for 5 minutes.
  3. Meanwhile, clean the mushrooms thoroughly and cut them coarsely.
  4. Sauté the mushrooms in some butter and season with salt and pepper.
  5. Spread the crostinis with truffle tapenade.
  6. Divide the sautéed mushrooms among the glasses and pour the soup over them.
  7. Serve the crostinis on the glass together with a sprig of thyme.
