Delicate pandan foam, based on milk or coconut milk, enriched with flaxseed for structure and an aromatic, silky-smooth texture.

Ingredients

1Pandan leaf

Preparation

  1. Cut the pandan leaf into pieces.
  2. Vacuum all ingredients and place the bag in a water bath at 70°C for 1 hour.
  3. Strain the mixture.
  4. Froth using an immersion blender.
