Pappadum with corn and chicken salad

Pappadum with a salad of corn and chicken pieces with sweet and sour celery. Approximate cost price per person: €1.45.For this dish, tender, pre-cooked chicken pieces are combined with a crispy fried pappadum. On top comes a spicy, fresh corn salad, fried chicken, and sweet-and-sour celery.

Ingredients

340gCorn
20gGreen peppers

50mlWater
50mlWhite wine vinegar
50gSugar

Battered chicken chunks
pappadums

Preparation

  1. Drain the liquid from the corn.
  2. Sauté the corn in a hot pan with a little oil.
  3. Finely chop the peppers.
  4. Mix the corn in a bowl with the peppers and mayonnaise.
  5. Season with salt and pepper.

  1. Wash the celery and cut into small pieces.
  2. Bring the water with vinegar and sugar to a boil.
  3. Let cool and vacuum seal with the celery to marinate.

  1. Cook the chicken pieces.
  2. Fry the pappadum until crispy.
  3. Cover the pappadum with the salad.
  4. Top with the chicken pieces and celery.
