Pavé potato with goat cheese & eel

Classic bite in the form of ‘Pomme pavé’. Combined with the delicious taste of smoked eel, young goat cheese with chives, and finished with some crispy seaweed.

The bite pairs wonderfully with a classic sauvignon blanc from the Loire! For example, Domaine Portier Quincy.

This recipe is for about 20 to 25 bites.

Ingredients

1kgCharlotte potatoes
2Potato starch
2Sunflower oil
1Chili powder
Pepper
Salt

250gSoft goat cheese
4Crème fraîche
1Fresh grated horseradish

Preparation

  1. Slice the peeled potatoes into thin slices using a mandoline

  1. Mix the goat cheese with the crème fraîche into a cream.
  2. Add the horseradish and mix it in.
  3. Season with lemon juice and lemon zest.
  4. Finely chop the chives and mix them in at the end.

  1. Soak some seaweed in water.
  2. Let the seaweed dry well and briefly fry in oil.
  3. Pipe some goat cheese cream onto the potato pavé.
  4. Place two pieces of smoked eel on top and garnish with the crispy fried seaweed.
