Vegetarian moussaka

This delicious vegetarian moussaka in a tartelette is made with roasted eggplant and classic tomato sauce.

Topped with, among other things, smoked mozzarella. Delicious with an expressive and aromatic garnacha blanco! For example, the Las Margas Garnacha Blanco Vegan.

Ingredients

800gRoasted eggplant
2units.itemsGarlic clove
200gpeeled canned tomatoes
10units.itemsFresh basil leaves
250gsmoked mozzarella
150gGreen olives
Savory tartelette shells
Parmesan cheese

Preparation

  1. Finely chop the garlic and briefly sauté in olive oil.
  2. Slice the fresh basil into strips and briefly heat in the pan.
  3. Add the tomatoes (without the liquid from the can).
  4. Heat the mixture over low heat.
  5. Puree using a hand blender.
  6. Season with pepper and salt.
  7. Mix the tomato sauce with the roasted eggplants.
  8. Finely chop the olives.
  9. Cut the smoked mozzarella into cubes and mix together with the olives into the mixture.
  10. Spoon the filling into the tartelette shells, about 40 grams per shell.
  11. Grate some Parmesan cheese over the tartelette shells and heat in an oven at 180°C for about 10 minutes.
  12. Serve directly from the oven.
