30gSushi rice vinegar
200gPassion fruit coulis
100gWater
10gPowdered sugar

1Bunch of chives
250gSliced watermelon
400gCuisin Easy Indian summer salad (quinoa and broad beans)
0.5Bunch of Thai basil
0.5bunch of mint
0.5Bunch of coriander
50gToasted poppy and sesame seeds
5Fresh passion fruits
Preparation
- Slowly bring the rice and water to a boil with the lid on the pan.
- Let it simmer gently for about 10-12 minutes.
- Drain if necessary and leave with the lid on the pan for another 10 minutes (heat off). Carefully stir in the rice vinegar.
- Mix the powdered sugar and xanthan gum.
- Use a hand blender to mix this into the passion fruit coulis.
- Emulsify with the olive oil, water, and mix in the CHEF Liquid Concentrate Asian.
- Put the dressing in a squeeze bottle.
- Mix all the ingredients for the Garden Gourmet VUNA salad.
- Halve the passion fruits and scoop out the pulp with a spoon.
- Pick and chop the Thai basil, coriander, and mint.
- Arrange all the ingredients on a plate or in a bowl.
- Generously drizzle with the passion fruit dressing, herbs, and poppy and sesame seeds.
