Portree Penicillin

Classic Penicillin with Isle of Skye whisky, honey-ginger syrup and fresh lemon juice, powerful and warming in flavor.

Ingredients

Honey
22mlFreshly squeezed lemon juice
Ice cubes
Candied ginger
22mlGinger syrup
60mlIsle of Skye 8 Year Old

Preparation

  1. Enrich the ginger syrup with some honey to taste.
  2. Pour the Isle of Skye 8 Year Old, the honey-ginger syrup and the lemon juice into a mixing glass.
  3. Add ice (preferably one large ice cube) and stir for about one minute until well chilled.
  4. Strain the cocktail into a chilled coupe glass and garnish with a bit of candied ginger, grated or on a cocktail pick if desired.
