Rainbow pasta

Recipe by FoodXperience chef Henri Troost from HANOS Hengelo.

Henri: “For this rainbow pasta, I made six different colors of dough. All with completely natural colorings. Spinach for green, beet powder for red, roasted bell pepper and tomato powder for orange, squid ink for black, turmeric for yellow, and raw red cabbage and blueberry powder for purple.”

100gRed cabbage

75gpuffed bell pepper

Preparation

  1. For each color dough, mix the eggs with the natural colorings.
    Green: fresh spinach
    Red: beet powder
    Orange: roasted bell pepper
    Black: squid ink
    Yellow: turmeric
