Beef brisket with cassoulet of white beans, dry sausage and lovage

In summer, beef chuck is perfect for briefly grilling on the barbecue. The approximate cost per person is €2.43.

Serve the brisket as a kind of 'farmer's dish' with a cassoulet of white beans, dry sausage, passata, and lovage.

Ingredients

Preparation

  1. Sauté a shallot with garlic and sliced dry sausage.
  2. Add the passata and let it reduce.
  3. Add the drained beans to the sauce.
  4. Finish with finely chopped lovage.
  5. Season with salt and pepper.

  1. Slice the sous-vide cooked chuck into pieces.
  2. Briefly heat the chuck by grilling on the barbecue or for 10 minutes in the oven at 160°C.
