
Scampi diabolique

Made with, among other things, the Risso chive dressing.Starter with scampi, fennel, pointed pepper, zucchini, and an Oriental spicy chive dressing. You make the spicy chive dressing yourself by adding a few ingredients to the Risso chive dressing for a different twist.

Chili
Tomato paste
Coriander
scampi
Pointed pepper
Fennel
cherry tomatoes
Zucchini
young leaf spinach
Preparation
- Defrost, peel, and devein the scampi.
- Cut the pointed pepper in half, remove the seeds, mix with olive oil, and grill.
- Slice the fennel very thinly, marinate with elderflower vinegar and olive oil. Season with salt and pepper.
- Make spaghetti from the zucchini.
- Place the grilled pepper and cherry tomatoes in the oven.
- Sauté the spinach.
