Preparation

  1. Mix everything until nice peaks form.
  2. Pipe into nice dollops.
  3. Dry at 75°C in a dehydrator.

  1. Clean the avocados and remove the pit.
  2. Puree everything in the blender and season with salt, pepper, and lemon juice.
  3. Divide into piping bags and store cool and dark.

  1. Slice the red meat and cut out with a cutter.
  2. Leave the radish raw.
