Preparation
- Mix everything until nice peaks form.
- Pipe into nice dollops.
- Dry at 75°C in a dehydrator.
- Clean the avocados and remove the pit.
- Puree everything in the blender and season with salt, pepper, and lemon juice.
- Divide into piping bags and store cool and dark.
- Slice the red meat and cut out with a cutter.
- Leave the radish raw.
