Preparation
- Cook the black quinoa with salt and let it cool, but not in the refrigerator.
- Cut the avocado into pieces and sprinkle with lime juice.
- Mix the black quinoa with the crème fraîche.
- Place the quinoa in the center of the nori sheet and spread evenly, leaving a 1 cm border.
- Place the avocado and pulled mushroom on the black quinoa.
- Roll the sushi using a sushi mat.
