Preparation
- Clean the meat before use and then vacuum seal it with a splash of olive oil.
- Cook sous-vide at 52°C for 20 minutes.
- Sear all sides until brown and roll in the finely ground chipotle.
- Puree all the beans (including the liquid) together with the miso to the desired thickness. This bean paste yields about 75 portions.
- Grill the a-maize-ing ribs until lightly browned.
- Fry the Flammes Frites and season with Fajita Spice mix.
- Place the steak on the plate and serve the a-maize-ing ribs next to it, along with the bean purée, a lime wedge and a coriander leaf. Spoon the salsa verde alongside. Put some bean purée in a small bowl and serve the Flammes Frites with it.
