
Taco with pork tenderloin, harissa and bell pepper

Preparation
- Season the pork tenderloin with taco spices.
- Sear the meat on all sides and cook to a core temperature of 65°C.
- Let the meat rest and slice thinly.
- Rinse the bell pepper with cold water and remove any blackened skin.
- Cut the bell pepper and little gem into thin strips.
- Roughly chop the smoked almonds.
- Mix everything together and season with olive oil and salt.
- Mix the yogurt with the harissa paste.
- Cut out the tortilla with a large cutter. Briefly toast in a dry pan on both sides.
- Fill the taco with the salad.
- Place the slices of meat on the salad and top with the harissa yogurt.
