Tuna on a crispy seaweed and tempura base with wasabi, served with a wasabi mayonnaise, an algae powder, and wasabi sesame.Ingredients
120gfresh tuna
4gFine salt
white ponzu
4gVending machine sugar
Sesame wasabi
Wasabi mayonnaise
tempura wasabi chips
cresses to taste
Algae powder
Preparation
- Portion the tuna to the desired size.
- Sprinkle with the salt and sugar and let the tuna marinate/cure for about 30 minutes.
- Clean and pat dry thoroughly.
- Shortly before serving, marinate the tuna in the ponzu so it lightly cooks.
- Place a dot of mayonnaise on the tempura wasabi chips.
- Place the tuna on top.
- Top the tuna with wasabi mayonnaise, sesame-wasabi, and sprinkle with some seaweed powder.
- Finish the dish with fresh cresses.
