Tuna & wasabi

Tuna on a crispy seaweed and tempura base with wasabi, served with a wasabi mayonnaise, an algae powder, and wasabi sesame.

Ingredients

120gfresh tuna
4gFine salt
white ponzu

4gVending machine sugar

Sesame wasabi
Wasabi mayonnaise
tempura wasabi chips
cresses to taste
Algae powder

Preparation

  1. Portion the tuna to the desired size.
  2. Sprinkle with the salt and sugar and let the tuna marinate/cure for about 30 minutes.
  3. Clean and pat dry thoroughly.
  4. Shortly before serving, marinate the tuna in the ponzu so it lightly cooks.

  1. Place a dot of mayonnaise on the tempura wasabi chips.
  2. Place the tuna on top.
  3. Top the tuna with wasabi mayonnaise, sesame-wasabi, and sprinkle with some seaweed powder.
  4. Finish the dish with fresh cresses.
