Vitello tonnato cone

Vitello Tonnato is a classic from Italian cuisine and consists of thinly sliced veal with a beautiful tuna mayonnaise.

Ingredients

vitello tonnato
soy cone
diced raw tuna -40
amuse holder wood
vegetable pâté mango pumpkin curry
smoked paprika pearls
Limoncello

Preparation

  1. Blend the vegetable pâté in a food processor until smooth and transfer to a piping bag.
  2. Marinate the tuna in the limoncello for about 30 minutes before use.
  3. Fill the cones with the pâté, topped with a cube of marinated tuna.
  4. Garnish with some smoked paprika pearls and a nice cress.
