Waffle with Lady’s Blue and grated fig

This dish consists of a waffle with Lady’s Blue, Epoisses, and Oud Brugge, accompanied by grated fig.

Figs

4Fig purée
10gemulbinder

Preparation

  1. Place a few figs in the freezer and a few in the fridge.
  2. Prepare the waffle batter according to the instructions on the package.
  3. Bake the waffles in a waffle iron.
  4. Break the waffles into pieces and place on the plate.

  1. Put the fig puree and sugar in a measuring jug, add the emulbinder, and blend smooth using a hand blender.

  1. Pipe the fig jelly between the waffles.
  2. Break the cheese into pieces and place on the waffles.
  3. Cut the figs from the fridge into wedges and place between the different cheeses.
  4. Grate the frozen fig with a fine microplane grater over the cheese at the table.
