Ingredients

chicory in orange juice
wild boar roulade with mushrooms
Olive oil
Veal stock

Preparation

  1. Sear the wild boar roulade on all sides and keep warm in a holding oven or at 55°C.
  2. Halve the chicory, pat very dry, and sauté in a little olive oil.
  3. Slice a piece of the roulade and serve with caramelized chicory and warmed veal stock.
