Preparation
- Sear the wild boar roulade on all sides and keep warm in a holding oven or at 55°C.
- Halve the chicory, pat very dry, and sauté in a little olive oil.
- Slice a piece of the roulade and serve with caramelized chicory and warmed veal stock.
