A beautiful red-washed cow's milk cheese with a soft, slightly sweet and nutty flavor. The rind is washed with brine and formed by the molds and yeasts in the caves where the cheese is aged, giving a characteristic, salty taste.
The Taleggio is delicious on a cheese board but also good to use in dishes because it melts well. The cheese is made from the pasteurized milk of cows that graze on alpine meadows at altitudes sometimes up to 2000 meters.
