No cheese has experienced such enormous growth in recent years as burrata. And once tasted, you will know why. Burrata originally comes from Puglia, the region in the heel of the boot in southern Italy. A soft cheese that resembles mozzarella, but even creamier. From the outside, burrata looks very much like mozzarella. When you hold burrata, you feel a clear difference. Burrata is softer. It is a pouch of mozzarella filled with a mix of cream and finely chopped young mozzarella, making it lush and soft in taste. Burratine is the handy small version and thus widely usable. Serve it, for example, simply as a starter with some lemon zest, salt, and a good olive oil.
