Bells Isle oysters are cultivated by the Moore family in the sheltered inner bay of Donegal, where native oysters have grown for centuries in cool and clean water. The oysters develop slowly over a period of three years, from oyster seed to full maturity. At all stages of cultivation, the oyster seed is carefully sorted to ensure consistent and high quality. The farms are spread across three locations within the bay, each with its own growth phase. The combination of open sea, mountain rivers, and limestone valleys in South Donegal contributes to the distinctive flavor profile. Bells Isle oysters are characterized by a full texture and a sweet, nutty flavor that lingers on the palate. The grading 3-12 refers to the size range within this selection.
