The swordfish, not to be confused with the sawfish, is a remarkable fish species. It is a fish that does not particularly taste like fish; the taste of swordfish is more reminiscent of veal. This is partly due to the firm meat texture. A swordfish that smells strongly of fish is spoiled. High-quality swordfish fillet is firm and has a cream/pink-like color. The fish can be fried and grilled. Smoked, the swordfish is also very tasty.
