A true artisanal raw milk Taleggio. The name and history of the cheese go back to the mountains between Lecco and Bergamo, where the Val Taleggio is located. The maturation of this fine red flora cheese takes place in natural caves, as in Valsassina. These caves have been renowned since the eighteenth century for their natural suitability for aging cheeses.
