Gelling agent based on locust bean gum, kappa carrageenan, and maltodextrin. 100% vegetarian and very easily soluble. Provides a slightly elastic gel with a pleasant mouthfeel.
Base: up to a maximum of 50 grams per 1 kilo/liter.
Use: dissolve cold and heat while stirring to above 65°C. Can be passed on warm up to a maximum of 60°C. The gel is reversible, so it can be reheated to liquid afterward. Good for dipping products or pouring out and then rolling up. Not suitable for freezing.
