500gBeet juice
Ginger syrup
40gvegetal
500gCream
Horseradish
Preparation
- Season 500 grams of beet juice with a little ginger syrup.
- Add 20 grams of vegetal and bring to a boil while stirring.
- Let the air bubbles disappear, then pour out thinly onto a tray and let cool.
- Season 500 grams of cream with horseradish (to taste) and salt.
- Bring this to a boil with 20 grams of vegetal, let cool (keep it still liquid), and then carefully pour thinly over the beet gelée.
- Roll this up together and cut to size.
