Preparation
1. Mix warm coffee, amaretto, and sugar.
2. Add Emulbinder and mix.
Tip: why use Emulbinder in this application instead of creamy gel?
- It shines more beautifully and has a creamier mouthfeel than creamy gel.
- Emulbinder is a good alternative to xanthan gum and is slightly less sticky compared to xanthan gum.
1. Place Crumble Brazil on the plate.
2. Place three crocq'amandel cookies on top.
3. Pipe dessert espuma Tiramisu on the cookies.
4. Finish with a Crunchy Nut of Almond and gold powder.
5. Drizzle the dessert with the Amaretto coffee sauce.
