Bavette with thick fries and béarnaise

Bavette comes from the flank of the cow and is a firm piece of meat with a long, coarse grain.

Ingredients

thick fries
beef bavette sous-vide cooked
béarnaise sauce

Preparation

  1. Sear the bavette on both sides in a pan and keep warm in an oven or warming cabinet.
  2. Fry the fries and heat the béarnaise in a small pan.
  3. Slice the meat and serve with the thick fries and béarnaise sauce.
